1 small yellow onion, diced
1 butternut squash, pealed
2 medium carrots
1 package firm tofu, cubed
1 apple, cored and quartered
2 cups vegetable broth
1 tsp curry powder
1 tsp cumin
1 tsp chili powder
1/2 tsp cinnamon
1 tsp salt
curly parsley for garnish
1) Finely chop all of the vegetables in a food processor.
2) In a large covered pot, heat the vegetables and tofu in the olive oil, scraping the bottom every 5 minutes or so, until some of the vegetables have browned, and the rest are soft.
3) Add the apple, and cover for another 5 minutes.
4) Add the vegetable broth and spices, and simmer covered on low heat for 10 minutes.
4) Stir, scraping the bottom, and then cover and simmer again for 10 more minutes.
5) Place in batches in a blender, and blend until smooth.
6) Serve with parsley garnish.
